(2003-03-10) Chicken Cacciatore

Cooking moment Of The Day: Chicken Cacciatore (from Cooks Illustrated). Used white wine and white mushrooms. Sautee thighs with skin, make sauce separately while thighs cool, then remove skins before putting chicken into sauce for final cooking.

(The good thing about cooking with wine is that it give you an excuse to open a bottle, cook with 1/2 a cup, then drink the rest that night. For medicinal purposes only...)

Also made ArtichokeHearts. Sautee without oil to cook off its own moisture, then add Olive Oil and garlic, sautee more, then add splash of white wine (since it was open) and sautee for one more minute.
