(2003-04-29) Cooking Bolognese

Old Cooking note - made a nice quick Bolognese sauce a couple weeks ago, stealing from latest Cooks Illustrated issue. Since kids would be eating some it, left out the pancetta and porcini mushrooms. Key factors, I think, were use of "meatloaf blend" (beef, pork, veal) and cooking meat with milk to soften it.
