N800: much bigger (pixels) screen; has microphone (VoIP Over WiFi); has Blue Tooth; Web Browser support Flash; lots of apps to download (LinuxOS).

IPod Touch: more storage (built in); ITunes integration/synch for media management.
This article started as a N800/Touch/UMPC comparison article, but the UMPC stuck out like a sore thumb. Ultra-Mobile PCs are devices dedicated to serious computing and application support in as small of a box as possible for that purpose. There are thousands of things you can do on a UMPC that you cannot do on either the iPod touch or the Nokia N800 Internet Tablet. The UMPC, however, will certainly not fit in your other pocket.
Update: TidBits makes a similar comparison, but is more precisely critical about software hassles with the N800, and is dismayed by the complete non-bundling of PIM software. But concludes that if you're the kinda person not bothered, it's a good deal.
